Finding a profitable niche seems to be the biggest problem with adsense arbitrage, or affiliate marketing for that matter.

Neat! I always go for keyword tools that give me a good average value, I don't chase the high stuff like cancer etc. Too much competition, always best to find something you are passionate about and write about that.
